Red, yellow, and green bell peppers—one of each—and half a purple onion, deseeded and cut into thin strips for later use.
Main ingredients can be chicken, shrimp, or beef.
🦐 1 pound of shrimp (16/20 count), deveined and shelled
🍗 1 pound of chicken breast, cut into thick slices
¼ cup olive oil
2 teaspoons coarse salt
1½ teaspoons cumin
1½ teaspoons ancho chili powder
½ teaspoon ground black pepper
½ teaspoon crushed red pepper flakes
½ teaspoon cayenne pepper
1 teaspoon garlic powder
½ teaspoon ground Mexican oregano
One lime 🍋‍🟩 and some cilantro for garnish

  1. Preheat the oven to 400°F (200°C). In a small bowl, mix all the seasonings (except for the olive oil).
  2. Mix half the seasoning with all the vegetables and half the olive oil; spread evenly on a baking sheet and bake in the oven for 15 minutes.
  3. Mix the remaining seasoning with olive oil and meat; spread over the vegetables in the oven. Bake chicken for about 12 minutes or shrimp for about 8 minutes.
  4. After removing from oven, optionally squeeze lime juice over it and garnish with cilantro.
  5. Heat tortillas (both flour and corn versions) in a frying pan over low heat for half a minute without adding oil.
