
Today I’m excited to share an incredibly simple home-cooked dish—Sour and Spicy Shredded Potatoes! With its tangy and spicy flavor combined with a crispy texture, it’s definitely a rice lover’s dream! 👏
Ingredients:
- 2 potatoes
- 1 green bell pepper
- 2 dried red chilies
- 2 cloves garlic
- 2 tablespoons vinegar
- 1 tablespoon soy sauce
- Salt to taste
- A pinch of sugar
- 1 tablespoon cornstarch
Instructions:
- Peel and julienne the potatoes. Soak them in water for about 10 minutes to remove excess starch, then drain well.
- Julienne the green bell pepper, cut dried red chilies into small sections, and mince the garlic.
- In a cold pan with cool oil, sauté the dried chilies and minced garlic until aromatic.
- Add the julienned potatoes and bell pepper strips; stir-fry on high heat until just tender.
- Stir in vinegar, soy sauce, salt, and sugar until evenly mixed.
- Mix cornstarch with a little water to create a slurry; pour it into the pan to thicken the sauce if desired.
Pro Tips:
- The finer you julienne the potatoes, the better their texture will be.
- Add vinegar at the end to retain its tanginess.
- For extra heat, feel free to add more dried chilies.
