• A pack of chicken drumsticks (usually about 6 pieces from a supermarket)
  • Ginger
  • One egg
  • Sichuan peppercorns
  • Dried chili segments (available at Chinese supermarkets)
  • Sichuan pepper powder
  • White pepper powder
  • Light soy sauce
  • Oyster sauce
  • White sugar
  • Aged vinegar

Optional ingredients:

  • Huang Feihong spicy peanuts
  • Chicken essence
  • Star anise
  • Bay leaves
  • Green onions

1️⃣ Marinate Chicken Legs:
Use kitchen scissors ✂️ to debone the drumsticks (or buy pre-deboned ones), then cut into 1-2cm pieces. Place them in a large bowl and add:

  • 2 slices of ginger 🫚
  • 1 tablespoon white pepper powder
  • 1 tablespoon Sichuan pepper powder
  • 2 tablespoons light soy sauce

Mix everything well by hand.

2️⃣ Prepare Chili Segments:
Soak dried chili segments in water according to your preference.

3️⃣ Add Egg:
After marinating for 15 minutes, remove ginger slices from chicken mixture and crack an egg 🥚 into it. Mix well.

4️⃣ Fry Chicken:
Heat a generous amount of oil in a pot over high heat (enough to submerge 1-2cm sized chicken pieces). Once oil is hot and slightly smoking, fry half of marinated chicken while stirring with a slotted spoon until golden brown on surface. Remove fried pieces and repeat with remaining raw chicken.

5️⃣ Refry Chicken:
After frying second batch, combine both batches in pot for another quick fry before scooping all out. There should be about half oil left in pot.

6️⃣ Stir-Fry Ingredients:
Keep pot on high heat; add Sichuan peppercorns (as preferred), ginger slices & minced garlic; stir-fry till fragrant. Add drained dried chili segments & continue till fragrant again; then pour in:

  • 2 tablespoons light soy sauce

Stir well then return fried chicken into pot along with:

  • 1 tablespoon oyster sauce

Mix evenly; sprinkle some white sugar (+ optional ingredients like chicken essence or Huang Feihong spicy peanuts) & continue stirring till desired saltiness achieved (add more soy sauce if needed). Finally drizzle aged vinegar around edge just before removing from heat & give final mix.
