Ingredients:

  • approx. 1 kg pork ribs
  • Green onions
  • Ginger
  • Garlic
  • Rock sugar
  • Star anise
  • Cinnamon sticks
  • Bay leaves
  • Light soy sauce
  • Dark soy sauce
  • Cooking wine
  • Salt
  • Chicken essence

Method

  1. Rinse the pork ribs with water. Place them in a pot with cold water along with green onions, ginger, and 4 tablespoons of cooking wine. Bring to a boil then drain.
  2. Heat oil in a pot and add some rock sugar. Cook on low heat until it caramelizes (be careful not to overcook as it can become bitter).
  3. Add the pork ribs and stir-fry until they change color. Then add green onions, ginger, garlic, star anise, cinnamon sticks, and bay leaves; stir-fry until aromatic.
  4. Add 2 tablespoons of light soy sauce, half a tablespoon of dark soy sauce, and 1 tablespoon of oyster sauce; mix well.
  5. Add enough water to cover the ribs completely. Bring to a boil over high heat (or directly use boiling water), then reduce to medium-low heat and simmer for 30-40 minutes until the ribs are tender and flavorful.
  6. Add 1 teaspoon of salt and 1 teaspoon of chicken essence. Increase the heat to high to reduce the sauce slightly before serving hot.
