
Ingredients:
- approx. 1 kg pork ribs
- Green onions
- Ginger
- Garlic
- Rock sugar
- Star anise
- Cinnamon sticks
- Bay leaves
- Light soy sauce
- Dark soy sauce
- Cooking wine
- Salt
- Chicken essence
Method
- Rinse the pork ribs with water. Place them in a pot with cold water along with green onions, ginger, and 4 tablespoons of cooking wine. Bring to a boil then drain.
- Heat oil in a pot and add some rock sugar. Cook on low heat until it caramelizes (be careful not to overcook as it can become bitter).
- Add the pork ribs and stir-fry until they change color. Then add green onions, ginger, garlic, star anise, cinnamon sticks, and bay leaves; stir-fry until aromatic.
- Add 2 tablespoons of light soy sauce, half a tablespoon of dark soy sauce, and 1 tablespoon of oyster sauce; mix well.
- Add enough water to cover the ribs completely. Bring to a boil over high heat (or directly use boiling water), then reduce to medium-low heat and simmer for 30-40 minutes until the ribs are tender and flavorful.
- Add 1 teaspoon of salt and 1 teaspoon of chicken essence. Increase the heat to high to reduce the sauce slightly before serving hot.
