🍽 Creamy Mushroom Risotto (Serves 2-3)
🛒 Ingredients
200g Arborio rice
800ml chicken or vegetable broth
1/2 onion (chopped)
150g mushrooms (sliced)
50ml dry white wine
20g butter + olive oil as needed
30g Parmesan cheese (grated)
Salt & black pepper to taste
Fresh parsley (optional)
👩🍳 Cooking Steps
1️⃣ Sauté the chopped onion and sliced mushrooms in olive oil. Add the Arborio rice and stir-fry for 1-2 minutes.
2️⃣ Pour in the dry white wine and cook until the alcohol evaporates.
3️⃣ Gradually add hot broth one or two ladles at a time while stirring constantly for about 15-18 minutes.
4️⃣ Stir in grated Parmesan cheese and butter. Season with salt & black pepper until it reaches a creamy consistency.
5️⃣ Garnish with fresh parsley if desired and serve immediately!
