🌿 Ingredients
Chicken thighs, rabbit meat, Spanish sausage (Sichuan sausage can be used as an alternative)
Parsley, red bell pepper, green bell pepper, onion, garlic, crushed tomatoes, short-grain rice, chicken broth
Saffron (optional), salt, olive oil, smoked paprika
📝 Steps
1️⃣ Debone the chicken thighs and cut into small pieces; you can use the bones for making broth. Cut rabbit meat and sausage into small pieces.
2️⃣ Dice onions, green bell peppers, red bell peppers, and garlic. Soak saffron in a small amount of water. Chop parsley.
3️⃣ Heat a generous amount of olive oil in a pot; add chicken thighs and rabbit meat with some salt until they turn golden brown. Remove them from the pot and add sausage slices; cook until done then remove them as well but keep the oil in the pot.
4️⃣ In that same pot with leftover oil add garlic onions green bell peppers red bell peppers stir fry well then add crushed tomatoes cooked rabbit chicken sausages mix thoroughly add rice salt mix again pour in chicken broth saffron simmer uncovered on low heat until liquid reduces.
5️⃣ Once liquid has reduced check if rice is about 85% cooked turn off heat cover with lid let sit for around 15 minutes sprinkle chopped parsley before serving.
