
Fabada Asturiana, a traditional dish from Spain’s Asturias region, stands out for its tender beans and rich flavor combined with pork sausage. This delectable dish is a staple at winter gatherings and celebrations in northern Spain.
🌿Ingredients:
- Pork belly
- Spanish chorizo (sausage)
- Spanish morcilla (blood sausage)
- White kidney beans
- Onion
- Garlic
- Smoked paprika
- Bay leaf
- Olive oil
- Salt
- Saffron
▶️Steps:
1️⃣ Soak the white kidney beans overnight.
2️⃣ Cut the chorizo into sections and the pork belly into large chunks; chop the onion. Place the white kidney beans, chorizo, morcilla (blood sausage), onion, garlic, bay leaf, olive oil, and smoked paprika into a stew pot. Add enough water to cover all ingredients by about an inch.
3️⃣ After stewing for about an hour, add saffron and salt along with some additional water if needed. At this point, you can cut the chorizo and morcilla into smaller pieces to enhance flavor release.
4️⃣ Continue stewing for another hour before serving.
