With summer upon us, nothing complements the season quite like a fragrant plate of basil pesto!
In the past, I wasn’t fond of using much oil in my cooking. However, after being influenced by Italian cuisine recently, I’ve discovered that adding more oil really enhances the flavor! During my time in Italy, I once noticed an elderly lady at a nearby table continuously pouring oil into her dish! 😂 Previously, I’d simply blend my pesto and eat it right away. But today, inspired by her memory, I decided to add more oil—and it truly made a difference! This must be the secret behind all delicious Mediterranean dishes!
Lately, I’ve been watching “Late Night Snacks” while eating. The protagonist says: “People may betray you, but beer never will~” Haha! For me, good food won’t either—and neither will olive oil 😌
🌿Ingredients (Serves 2)
- Fresh basil: 40g
- Pine nuts: 4 tablespoons
- Vegan cheese: 3 tablespoons
- Small clove of garlic: 1 (crushed)
- Extra virgin olive oil: as needed
- Salt: as needed
- Lemon juice: a dash
Pasta: 180g
🥢Steps
- Cook the pasta to your desired level of doneness. Drain and rinse with cold water; set aside.
- While cooking the pasta, remove stems from basil leaves and place them in a bowl. Add pine nuts, vegan cheese, crushed garlic, salt, lemon juice, and olive oil. Blend with a hand blender until smooth and even. You can add ingredients gradually to achieve your preferred taste! Finally, pour enough olive oil so that the pesto is fully submerged—mix well.
- Serve the pasta on plates; add an appropriate amount of pesto sauce and mix thoroughly before enjoying~
