The first time I ventured into making Italian cuisine myself (apart from pasta and pizza ), it was an entirely new flavor experience for me. As I tasted the sauce during its reduction process, I couldn’t stop; it had a unique tomato aroma combined with rich meatiness and hints of fresh fruit, wood, and wine. It felt like running through a forest covered in wild fruit scents before coming back home to relax comfortably while enjoying meat and soup !

This dish is not only simple to prepare but also fills your home with an enticing aroma all night long. Even after six hours have passed, there’s still a mouthwatering fragrance lingering in the air…

Additionally, this sauce is incredibly versatile; it’s so delicious that any leftovers can be used as a topping for rice 😋.

Here are some substitutions you can make:

  • Use butter or regular cooking oil instead of olive oil.
  • Replace brown mushrooms with any variety of mushrooms. I chose brown mushrooms because they are sturdy and flavorful.
  • Substitute red wine for white wine. I opted for sweet white wine because I like adding sugar when cooking meat.
  • Use parsley instead of basil leaves. I picked basil leaves because I have an abundantly growing basil plant.

🍗 Basic Ingredients:

  • Whole chicken (1400g)
  • Brown mushrooms (100g)

🧅 Stew Ingredients:

  • Garlic (20g)
  • Onion (100g)
  • Carrot (50g)
  • Black pepper powder (to taste)
  • Salt (to taste)
  • All-purpose flour (to taste)
  • White wine (50ml)
  • Tomato Sauce (160ml)
  • Black olives (30g)
  • Olive oil (as needed)
  • Basil leaves (optional)

🥣 Chicken Broth Ingredients:

  • Chicken Broth (600ml)
  • Chicken carcass (all parts)
  • Carrot (40g)
  • Bay leaf (1 piece)
  • Clove (1 piece)

1️⃣ Step One: Prepare the Whole Chicken:
Break down the whole chicken into thighs, drumsticks, wings, breast meat, and carcass.
Season all edible parts except the carcass evenly with salt and black pepper.

2️⃣ Step Two: Cook the Chicken Broth:
Place the chicken carcass along with filtered Chicken Broth, chopped carrot pieces, bay leaf, and clove into a pot. Bring to a boil over high heat then reduce to low heat and simmer uncovered for 30 minutes while skimming off any foam that forms.
During this time you can proceed with subsequent steps.

3️⃣ Step Three: Prepare Side Ingredients:
Finely chop garlic, onion, carrot; cut brown mushrooms into small pieces.

Coat chicken pieces evenly with flour shaking off excess flour. Heat olive oil in a pan; once hot sear chicken skin-side down first until both sides are golden brown then set aside.
