
Mexican pies are incredibly delicious and super easy to make. The ingredients are simple to prepare, and most importantly, they are very satisfying even during a diet phase. This time I used chicken breast for the filling—one bite and you’ll be hooked.
☁️ Ingredients:
4 whole wheat tortillas (this recipe makes either 2 large or 4 small pies)
1 chicken breast, cheddar cheese, shredded cheese, 1 tablespoon unsweetened tomato sauce, 1/4 diced onion, 4 cherry tomatoes
☁️ Marinating the Chicken Breast:
- 1/2 teaspoon salt
- A pinch of black pepper
- 1/2 teaspoon curry powder
- 1 teaspoon chili powder/Paprika (optional if you don’t like spicy)
- First, dice the chicken breast, tomatoes, and onions.
- Marinate the chicken breast for 15 minutes.
- Heat some oil in a pan and sauté diced onions until translucent before adding the chicken breast.
- Once the chicken is fully cooked through, add diced tomatoes and a tablespoon of tomato sauce.
- Continue cooking until everything is well done (set aside).
- Spread the filling and cheese on one half of each tortilla; fold them into semi-circles and press firmly with your hand.
- Cook over low heat until both sides are crispy and the cheese has melted.
- Done ✅
⚠️ Adding chili powder and curry powder won’t make it spicy but will enhance the flavor.
⚠️ If you don’t have curry powder, use cumin instead.
⚠️ If you don’t have chicken breast on hand, minced pork works as well.
