🌶Ingredients🌶

  • Canned chili (198g)
  • Beef (1200g), cut into large chunks
  • Carrots (3), cut into pieces
  • Corn kernels (100g)
  • Beef or chicken broth (900ml)
  • Onion (1), finely chopped
  • Garlic (5-6 cloves), minced
  • Garlic powder (1 tsp)
  • Onion powder (1 tsp)
  • Cumin powder (1 tsp)
  • Oregano powder (2 tsp)
  • Paprika chili powder (1 tsp)
  • Salt & black pepper to taste
  • Bay leaf (1)
  • Chopped cilantro for garnish

Instructions:

1️⃣ Blend the canned chili into a smooth paste and set aside.

2️⃣ Heat some oil in a pot over high heat. Sear the beef chunks until browned on all sides and all moisture has evaporated. Remove the beef from the pot.

3️⃣ In the same pot, sauté onions and garlic until onions are very soft. Add carrot pieces along with garlic powder, onion powder, cumin powder, oregano powder, paprika chili powder, and bay leaf. Sauté for about a minute to release the spices’ aroma.

4️⃣ Return beef chunks to the pot; add broth and blended chili paste. Sprinkle in half a teaspoon of salt for flavoring. Bring to a boil over high heat then reduce to medium-low heat and simmer for an hour and a half.

5️⃣ Add corn kernels; simmer with lid partially covered for about 20 minutes until thickened. Taste test; adjust seasoning with salt & black pepper as needed. Garnish with chopped cilantro before serving.
