  • Medium Potatoes: 2 (peeled & sliced—not too thin) 🥔
  • Eggs: 5 🥚
  • Onion: 1 (diced) 🧅
  • Olive Oil: Slightly more than usual—enough to cover most of your potatoes 🫒
  • Salt & Black Pepper: To taste 🧂🫒
  • For an extra touch of luxury: Add minced meat & cheese slices—making it rich & flavorful ✋

🍳 Cooking Steps:

  1. Frying Potatoes & Onions:
    • Pour an adequate amount of olive oil into a non-stick pan & heat on medium-low.
    • Without overheating the oil, add potato slices & diced onions; sprinkle with some salt & fry gently on low until they absorb that lovely olive oil aroma. Cover with a lid & let simmer for about 5 minutes until soft. Remove from pan & drain excess oil (which can be reused later).
  2. Mixing Eggs:
    • While frying your potatoes & onions, crack eggs into a bowl; add some salt & black pepper—mix well. Add slightly more salt as potatoes lack inherent flavor. Five eggs might seem excessive but remember—you’ll have leftovers!
    • Drain fried potatoes/onions of any excess oil; once slightly cooled mix them into your egg mixture (too hot will cook your eggs prematurely).
  3. Frying Your Omelette:
    • Leave just enough residual oil in your pan before pouring in half your mixture.
    • For our deluxe version—spread meat sauce (I used my best batch from my fridge), cheese slices along with mozzarella evenly between layers.
    • Pour remaining mixture over ensuring everything’s covered nicely.
    • Cover lid again—fry gently over low heat around 5-6 minutes.
    • Using plate flip omelette carefully back onto other side adding more oil if necessary till fully cooked through another approx 3-4 minutes—take care not burn yourself!

    • Sprinkle chopped parsley atop before slicing up ready-to-eat!
