🌮️Slow-Cooked Shredded Beef Taco
🥩【Ingredients】
Beef shoulder or tenderloin | Onion | Celery | Carrot | Tomato | Red wine | Tomato paste | Avocado | Tomato | Avocado | Lemon | Cilantro

❶ Cut beef into large chunks; pat dry with paper towels; sprinkle lightly with low-gluten flour; sear in a frying pan until browned on both sides; remove from pan.
❷ In a cast iron pot: sauté onions, carrots & celery until fragrant; pour in 200ml red wine & stir until alcohol evaporates; add enough water to cover beef; add 2 tbsp paprika + 2 tbsp chili powder + 3 tbsp tomato paste + 1 bouillon cube + 2 bay leaves; return beef to pot; once boiling reduce heat & simmer for 120 minutes.
❸ Cool cooked beef & shred into pieces.
❹ Dice onion/tomato/cilantro; mix with juice from half lemon + salt + black pepper; set aside.
❺ Mash one avocado + 2 tbsp unsweetened yogurt + juice from half lemon + salt to make guacamole.
❻ Place shredded cheese on tortilla & heat in frying pan until melted; add shredded beef & shape using taco mold; layer salsa & guacamole to finish✅
